Crockpot Bean Dip

You will need:

~1/2 bag 15 bean soup mix

~5-6 cups water or broth

~1 can green chiles

~SPG(salt, pepper, garlic)

~minced onion(dried or fresh)

~1/3 cup sour cream

~1/2 shredded cheese/queso

This recipe is super easy and a definite crowd pleaser! I typically use half a bag of beans if I am making this for a get together but you can adjust the amount of beans you use accordingly. I then add in my liquid. There is a couple different ways you can do this, both of which taste delicious. You can either use the seasoning packet that comes in the package of beans and mix with your water or you can use beef broth. The beans will absorb a lot of liquid so just be aware of that. I add approximately 5-6 cups of water/broth to my crockpot along with the beans, green chiles, and seasonings.

You can either cook this on high for 4-5 hours or low for 6-8 hours depending on your schedule. Once the beans are cooked through, you can either mash them or use a blender to make a smoother, creamier dip. I usually like to mash mine so there are still some pieces of the beans. Next, add in your sour cream and cheese. Again, use your personal preference for the cheese. I usually use a mixture of shredded cheese and old dutch smoky chipotle queso dip in mine.

Once the cheese and sour cream are incorporated, the dip is ready to serve with your favorite tortilla chips! Enjoy!
