Chicken Fried Steak

You will need:

~Cube Steak

~Worcestershire

~2 eggs

~Milk

~SPG(salt, pepper, garlic)

~Minced onion-dried

~2 cups flour

~1 Sleeve Club Crackers

~Oil for frying

First, I season my cube steak with my SPG(salt, pepper, and garlic) and a little Worcestershire. I let that set for 10-15 minutes. Preheat your skillet with about a 1/4 cup of oil on medium heat. While that is doing its thing, I get my egg and flour mixtures ready for breading the steaks.

For the egg mixture, you will mix the eggs, a splash or two of Worcestershire, and a 2-3 tbsp of milk. For the flour mixture, you will mix flour, crushed sleeve of club crackers(or crackers of choice), SPG(salt, pepper, garlic), and dried minced onion. Depending on the number of steaks you are making you will want to adjust this accordingly. I typically make 4-6 steaks with this recipe.

Once your oil is ready, it’s time to start breading! Soak each steak in the egg mixture and then coat firmly with the flour/cracker mixture on both sides and get it to frying! Typically 3-4 minutes per side is all it takes. The crispier you like the outside coating the longer you will want to cook them. I like mine crispy so the crackers and minced onion get nice and crunchy!

I like to serve mine with cheesy green beans and mashed potatoes, however, we substituted the potatoes with a salad this time since my boys are watching their weight for wrestling. I have been getting lots of questions about the cheesy green beans so I will share that recipe as well. Super simple!

Cheesy Green Beans:

~2 Cans cut green beans

~5-6 slices of cheese or cubed velveeta

~1-2 Tbsp. milk

Combine all ingredients on stovetop or microwave until cheese is melted and voila!

Chicken and Dumplings

Who doesn’t love some good comfort food?  That is exactly what we were craving in our home today so we decided to make us some chicken and dumplings and boy did it hit the spot!

Ingredients you will need:

-2 Boxes Chicken Broth or Chicken Bouillon

-1 Can Cream of Chicken Soup

-1 Cup Chopped Celery

-1 Cup Chopped Onion

-Rotisserie Chicken(I used a Lemon Pepper one from Wal-Mart)

-Salt and Pepper

-1 Tbsp. Onion Powder

-1 Tbsp. Minced Garlic

-Biscuit Mix

*Preheat oven to 415 Degrees

I like to use a big roaster pan when we make ours so I use two burners when cooking this.  Start off with adding all of the ingredients except for the biscuit mix to the pan.   I like a little extra chicken flavor in my soups so I always use my chicken broth and then add a little chicken bouillon to it also.  You could also use canned chicken in place of the rotisserie chicken if you wanted to.  Again, all of this is personal preference and there is no right or wrong way to do it!

Once all of this has came to a boil you are now ready to add your dumplings.  Prepare your biscuit mix per directions on the package.  Drop by spoonfuls into the soup mixture.  Once all of the dumplings are in and are beginning to float it’s time to put the lid on and stick it in the oven.   Cook for 25 minutes and then remove the lid and cook for an additional 15 minutes to brown the tops of the dumplings.  Enjoy!
